Cauliflower Pancakes

Ingredients:

-  1 head cauliflower
-  2 large eggs
-  1/2 tsp cajun seasoning
- 1/2 c mild cheddar cheese, grated
- 1/2 c panko crumbs
- coconut oil

Instructions: 

1.Cut cauliflower into florets & cook in boiling water for 10 minutes, then drain. Place in large bowl, and begin to mash the cauliflower while still warm.
2. Stir in cheese, eggs, panko crumbs, cajun seasoning & salt to taste.
3. Coat the bottom of your skillet with coconut oil over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side.
