Taco cups

1 lb ground turkey meat
1/2 c onion
1 can black beans
1 package of mixed cheese
1 package of corn tortillas (unless you don't like them, then find a whole wheat or low calorie tortilla)
1/2 c water
1/2 package of low sodium taco seasoning

1. Preheat oven 375*
2. Cook turkey meat, & onions. Once cooked, drain black beans & pour in, mix together, add water (you can use 1/2 of black bean can), then add in taco seasoning.
3. While the turkey meat cooks start to cut out tortilla circles with either black bean can or a cup. Spray cupcake pan with Pam, then place tortilla in pan and take leftover pieces to make a cup shape.
4. Once meat mixture is finished (you will know when there is no water left) put mixture inside cups and top with cheese
5. Place and oven bake 5-10 mins. Use a small spatula to scoop out of cupcake tin. You can add any toppings that you like lettuce, tomato, sour cream. All optional.
