Crusted Sweet Potato Cups


- 3 sweet potatoes
- 1/2 c coconut milk
- 1/2 c crushed pecans
- 1 tbsp cinnamon
- 1 tbsp nutmeg
- 1 tbsp honey
- 1 tbsp organic sugar

1. Remove the skin from the potato, and cut it into small squares, preheat oven 425'
2. Place in water, and cook on stovetop for 20 mins
3. Drain water
4. Add all the ingredients EXCEPT PECANS, and use a masher to begin mashing.
5. Begin to scoop a tablespoon into each cupcake holder (sprayed with pam before) sprinkle the top of the "cupcakes" with the crushed pecans, and sprinkle organic sugar over the top.
6. Bake 15 mins

Serve! Nothing is better than some good southern sweet potato mash!
