Sweet Potato "Tortilla" Soup


Ingredients
- 1 large sweet potato (these will be the "tortillas")
- 3-4 large chicken breast
- 2 tbsp coconut oil ( 1 tbsp chicken and 1 for veggies)
- 32 oz ( 6c) low sodium chicken broth
- 1 can enchilada sauce
- 1/2 bell pepper
- 1 can black beans 
- 1 can corn
- 1 diced zucchini
- 1 can diced tomatoes
- 1/2 c diced cilantro
- 1/2 diced onion
- 1 clove diced garlic 
- 1/2 package low sodium taco seasoning 
- 1 lime
- 1 c cheese (this is for a personal topping if you want it)
- 1/2 avocado for each person (I like to dice it and squeeze lime juice over it)


Instructions:
1. Place chicken at the bottom of the crockpot and turn on high 
2. Dice up all of your veggies, Pour all of your diced veggies and canned veggie items inside the crockpot.
3. Add spices
4. Begin to pour in the diced tomatoes, enchilada sauce, MIX, and add in broth.
5. Add cilantro.
6. Cook on high 6 hours, or until chicken is cooked threw. Then Shread cooked chicken 
7. Pour in small serving bowl, place avocado slices at the top of the soup, sprinkle with cheese, squeeze lime juice over.
