Cajun sauce

If you love Cajun food as much as I do but don't want all the calories, this is your meal! It has become my new favorite! 

1/2 tsp coconut oil 
3/4 c coconut milk
1 diced green bell pepper 
1/2 diced yellow onion 
2-3 c shrimp 
1/2 tsp butter 
3 sliced andouille sausage 
1/2 tbsp garlic salt (or 1 garlic clove)
1 tbsp tomato paste 
1/2 tsp Cajun seasoning
1/2 juice from lime 
1 c sliced mushrooms (optional) 

1. In a large skillet place coconut oil and let it melt. After it melts add in peppers mushrooms, and onions and sauté for 5 minutes. Then add butter. 
2. Add tomato paste to skillet. In a bowl place shrimp, and sprinkle with a little Cajun seasoning and garlic. 
3. Add shrimp and sausage to skillet
4. Once meat is cooked and shrimp is pink, add coconut milk and put on low heat. Add the remainder of seasonings, I like spicy food so you can always add hot sauce or more seasoning. 
5. While sauce cooks prepare grits or whole wheat pasta 
6. Pour on top and serve!
