Leftover quinoa cups

 I don't like to waste food, so I took last nights quinoa casserole leftovers, and made breakfast. 

Ingredients: makes 6 cups 
- 1 c quinoa 
- 2 eggs 
- 1/2 c broccoli 
- 1/4 c cheddar cheese (optional) 
- 1/4 c small diced sweet potatoes 

Instructions:
1. Preheat oven 375'
2. Place all ingredients in bowl, and mix together
3. Take a 1/4 c scoop out mixture and place in a cupcake tin 
4. Bake 20 minutes
