Pad Thai

Ingredients:
- 1 box pad thai rice noodles
- 1/3 c sliced cabbage
- 1/3 c diced carrots
- 2 scallions
- 2 over medium diced eggs
- 2 cloves chopped garlic
- 1/4 c cilantro
- 1/2 lime juice
- 1-2 grilled/baked chicken breast (diced)
- 1 tsp peanut oil

Sauce:
- 3 tbsp low fat peanut butter
- 3 tbsp low sodium soy sauce
- 1/2 tsp ginger
- 1/2 tsp sesame oil
- 1/2 tsp chili sauce
- 1/2 tsp honey
- dash red pepper flakes

1. Heat peanut oil in large wok, make sure all veggies are diced. One oil is hot add all veggies and mix together

2. Mix sauce together , and bake chicken

3. Soak thai noodles in hot water for 10 minutes, drain and set aside. Cook egg
4. Once veggies have cooked through, add diced chicken, and noodles. Mix together

5. Add mixed sauce and mix together. Top with lime.

I served this dish with steamed veggie potstickers
