Turkey quinoa stuffed pepper casserole

Or
Ingredients: 
- 1 lb ground lean turkey
- 1/2 tsp taco seasoning (for turkey) 
- 1 box quinoa/brown rice mix 
- 1 can black beans 
- 1 can enchilada sauce 
- 1 handful of chopped cilantro 
- 1 c corn 
- 1.5 c mixed cheese 
- 1/2 lime 
- 1 pepper per person unless you are making one large casserole 

Instructions: 
1. Preheat oven to 350', begin to cook turkey meat. Once meat is almost finished add seasoning. Cook quinoa as well, until cooked 
2. Place all ingredients in large bowl 
3. Mix together carefully by folding over. Don't want to over beat the rice/beans 
4. Stuffed each pepper with mixture or pour into large baking dish 
5. Add cheese and spread 
6. Bake for 15-20 minutes
