Greek salad

Ingredients : 
- 1 cucumber  
- 1/2 purple onion 
- crumbled feta cheese
- 1 c cherry tomatoes (I don't like them so I don't have them in mine) 
- mixed olives 
- 1 c spinach lettuce per person 

Dressing: 
- 1.5 tbsp red wine vinegar
- 1.5 tbsp olive oil
- 1 tsp Dijon mustard 
- 1 tsp basil
- 1 tsp oregano 

Add cooked protein: either shrimp or chicken (I sautéed chicken in lemon juice, oregano, and basil) 

Instructions: 
1. Whisk together dressing ingredients 
2. Thinly slice veggies and place in large bowl 
3. Cook protein 
4. Add feta cheese , protein, and dressing. Mix all together
