Vermicelli salad

I have an obsession with a copy of this salad from Pho in Austin,Texas and did my best to copy it to cure my craving. It turned out delicious, easy to feed more than one person, and is a very filling salad. 

Ingredients: 
- cucumber
- cilantro
- carrots
- any meat of your choice, I used chicken 
- spinach lettuce
- rice sticks 

Chips: wonton wrappers
Coconut oil






Dressing: 
- 1 tbsp rice vinegar
- 1 tsp chili sauce
- 1 tbsp water 
- 1/2 tsp low sodium soy sauce 
- diced carrots 

1. Slice veggies, and cook noodles 
2. Mix dressing
3. Begin to layer salad
4. Heat coconut oil, and carefully lay wonton wrappers in oil to fry, 1 min on each side or until crispy.
